Cheaters Quiche

I love to cook, and love traditional recipes. Recreating a recipes of grandmas and spending all day in the kitchen can be extremely fulfilling, especially when the end result is fabulous. Unfortunately today's world doesn't run on the same time cycle as grandmas and we often find ourselves pressed for time and a home-cooked meal is often the first thing to be axed from our schedules. Here is a quiche recipe that I altered from the original to make it easy and still tasty.

Cheaters Quiche

What you need:
1 frozen deep-dish pie shell
4 scallions- sliced thin
8 oz of crumbled blue cheese or gorgonzola
4-6 slices of crisp cooked bacon - chopped
3 sliced plum tomatoes, OR 1 pint grape tomatoes halved
1 package of  Eggbeaters (6 eggs )
salt & pepper to taste

Preheat oven to 400 degrees.

Assemble the ingredients in the pie shell in layers, (example: scallions, tomato, blue cheese, bacon, more tomato, and more scallions)
Salt and pepper over the filling.
Pour eggbeaters evenly over the filled pie shell. Lightly shake the pie shell to evenly distribute the egg. Do not worry if some ingredients aren't covered, they will settle during cooking.

Bake 15 mins. at 400, the reduce heat to 350 and continue baking for 50 mins.
Remove from oven and let settle for 20 mins. before cutting and serving. Serves 6-8

This recipe can be adapted to use with any filling you prefer and goes great with a tossed salad or fresh fruit.
Remember if using meat, be sure to fully cook it before adding to your quiche.
Trust me...the Eggbeaters work wonderfully in a quiche.

Are "Tweets" for "Twits"?

  I don't seem to get the hang of tweeting. I made an account late last summer, mainly out of curiosity. Granted my followers are few, but I still don't see the point.

  I went through the list of people to follow and selected some authors. actors, chefs, news, and even the president. Surely these notable celebrities would have interesting things to tweet....umm..NOT. Even Obama tweets are boring.

  One author (who shall remain nameless) is someone whose writings I've enjoyed for years. I was excited to find her on Twitter and hoped for news of upcoming projects or links to enticing passages from a new book. Well after several months all she has tweeted is links to daily newspaper articles. I suppose I shouldn't be surprised I haven't seen any clues to a new book...she hasn't had time to write anything because she's addicted to the daily news...

  Seems everyone else uses it to post their next talk show appearance, or else uses it to talk in some alien code to people we are deemed to never know. Charlie Sheen was interesting for....ohh....maybe 48 hrs. then he just got sort of sad and pathetic.

  Maybe I just don't get the attraction. Chat and messengers I understand. Email I understand. Sending a short blurb into cyberspace for anyone and their pet to read, I don't get. It could be because I'm not phone obsessed. I actually despise phones, and have been following Twitter from my computer. That could be the problem..Tweeting might be only truly appreciated for it's instant human cyber-contact via the phone.

  So to those of you who enjoy Twitter...Tweet On!  I think I'll stick with email and the Facebook chat box........
